Bienvenue ~ Welcome Bonjour mes amis! In the spring of 2003, I traded my keyboard for a cutting board and haven't looked back. Life has been amazing ever since. Hard beyond belief, challenging, painful, humiliating, lonely, humbling, overwhelming and yet heart-warming, joyous, inspiring, exhilarating, I could go on and on...
Advice is easy to give, but following one's own is near impossible... I'd love nothing more than to tell you all to throw caution to the wind and follow your heart but we are all on our own journey, in our own time.
So take your e-ticket (the one from Disneyland!) and please join me on my culinary journey through France. You'll have a front row seat in a French kitchen so fasten your aprons and let's get cooking! Experience the highs and lows, the cuts and burns, the rants and raves, the fish guts and real nuts... ~Laura Pauli, Paris, December 2005

Laura's culinary passion began as a child, spending endless hours in her Italian grandmother’s kitchen, which always had a bubbling pot of tomato sauce on the stove. Her professional career began unknowingly with her first cooking class at Home Chef Cooking School in San Francisco.
Laura launched a cooking school and invited friends, family and acquaintances to join her in her version of the Tuscan countryside. Taking the nickname her Italian grandfather gave her as a child—“testa rossa”, which translates as “red head”—Cucina Testa Rossa or the Red Head's Kitchen, was officially open for business.
Aspiring to become an outstanding chef, Laura traded her keyboard for a cutting board after a decade in Silicon Valley and moved to New York City to immerse herself in food and wine studies. She graduated from the French Culinary Institute and headed to France to cook her way around the country.
